This herbal tea is as surprising as the character from which it takes its name! There are many varieties of mint, and they have adapted very well to the foothills of the upper Aude valley. Here, I chose to use strawberry mint! It is a mint which has a pleasant minty and fruity taste reminiscent of the famous red fruits. I combined it with basil and used a rooibos base, which gives us a pretty amazing blend reminiscent of summer scents.
