Pu'er is a semi-fermented tea from China, the resulting liquor is very dark. The flavors are complex; they go from humus, to mushroom, to leather initially; then leaves more roasted and chocolatey notes. Like wine, it becomes more complex with time.
The compressed cake is the ideal quantity for 1 liter of water, it must be simmering (around 90°C). You must first rinse the pu'er once (i.e. throw away the first infusion). To do this, pass the liter of water over the pu’er cake. Then, in a second step, infuse the pancake for 2 minutes in a liter of simmering water.
